Tomato Soup
Ingredients
Plump Tomatoes – 3
Onion- 1 medium
Garlic- 2 to 3 cloves
Oregon leaves – one bunch
Green chilly-2 small
Fresh cilantro
Salt
fresh pepper
Oil
Water
Step-1
Take 3 plum tomatoes, with water in a pan. Make sure the tomato is submerged in the water and boil them until the tomatoes are soft and the skin starts to peel. Set aside until the tomatoes cool down so you could peel them.
Caution: Don’t waste the water you used to boil the tomatoes. Use the water as vegetable stock in any of your dishes. You could use it to grind all the ingredients into Tomato soup.
Step-2
Chop onions, green chilies, garlic. Take a medium-size saucepan and add some olive oil and saute. once onion is cooked allow it to cool.
Step-3
Peel the skin from the boiled tomatoes from step-1 and cut through the tomatoes before adding them to a blender along with the sauteed onions, garlic and green chilly from step- 2
Step-4
Blend all into a smooth paste. Add the vegetable stock which you prepared in step-1. Pour the blend into the saucepan. Add required salt and some Black pepper for taste. Bring the soup to a boil. Add chopped Oregano leaves, fresh cilantro leaves into the soup and simmer the soup for few minutes.
Step-5
Enjoy the soup along with a fresh spring salad or Vegetable sandwich.
